Southwestern Vegetarian Quinoa


I hope you had a wonderful Labor Day weekend.  It was so nice to have a day off from work and enjoy the nice weather in the city.  It's also nice to only have a four day work week:)  

  Last week for dinner I made this Southwestern Style quinoa.  It's vegetarian and gluten free and you wont even miss meat or gluten from this dish.  Plus, I think I might like red quinoa better than the normal ivory quinoa that I used in my Chicken Curry Quinoa Salad.  It's a little more firm to the bite and the color is quite fun.  

Next on my list is black quinoa.  I'm thinking something orange to pair with it for a Halloween style salad.  






 Southwestern Vegetarian Quinoa
Serves 4

Ingredients:
1 Cup Red Quinoa
2 - 3 Heirloom Tomatoes chopped (only because they were in season - otherwise another tomato would work) 
2 Ears of Corn - Remove corn from ear
1/4 Red Onion diced into 1/4" x 1/4" squares about
1 Can Black Beans - drained and rinsed
1 Avocado chopped
1 Jalepeno - seeds removed and diced small
1/2 Cup chopped Cilantro (optional)
2 Garlic Cloves - chopped
Olive Oil
Salt 
Pepper

Dressing:
Juice from 2 Limes
2 tsp Cumin
1 tsp Chili Powder
2 Tbsp Red Wine Vinegar
2 Tbsp Olive Oil
Salt
Pepper

Directions:
Combine 1 cup red quinoa with 2 cups water in a saucepan.  Bring to a boil.  Reduce heat to low, cover, and simmer for 15 minutes until all the water is absorbed.  Saute corn, garlic, black beans and jalepeno with olive oil and salt/pepper over medium high heat for about 5 minutes.    Remove from heat and place in a large mixing bowl.  Add chopped tomatoes, onion, avocado, and cilantro.  Whisk dressing ingredients together.  Add quinoa and dressing to the vegetables and mix together.  Season to taste with salt and pepper.
