Want a quick and healthy dinner that doubles for lunch the next day?
This recipe packs a ton of protein into a relatively low calorie dinner. I personally love tuna, however it usually tastes best with a big spoonful of mayonnaise. Try this quick dressing with the white beans and crunchy veggies and I am pretty sure you won't miss the mayo. Well who am I kidding, this recipe will at least fade your memory for a day or two!

Tuna and White Bean Salad
Serves 2 - 3
2 Celery Sticks Sliced
1/2 Small Red Onion Roughly Chopped
2 Can Tuna in Water - Well Drained
1 Can Cannellini Beans
1 Small Bunch Chives Chopped
3 Tbsp Red Wine Vinegar
Juice from 1 lemon
1 Heaping Tbsp Dijon Mustard
1/2 tsp Thyme
1 Garlic Clove Chopped
1 Shallot Chopped
5 Tbsp Olive Oil
Bread Sliced and Toasted with Olive Oil, Salt, and Pepper
Dressing: Mix all ingredients together except for the olive oil. Slowly whisk in the olive oil. Add more to taste. My version is tangy.
Salad: Put all ingredients into a bowl. Add dressing till well coated. The tuna will soak up a lot of the dressing, so I used a good amount.
Plating: Place a good amount of mixed greens on plate. Place tuna salad on top of the greens and add some of the dressing to the bottom of the bowl if needed. Serve with toasty bread.
