Roasted Tomatoes and Onions
Ingredients:
1 Box Cherry Tomatoes
1 Large Red Onion
3 tbsp Olive Oil
Salt
Pepper
Directions:
Cut red onions into 1/4" rings. Place whole cherry tomatoes and red onion rings onto a baking sheet. Pour olive oil over the vegetables. Sprinkle salt and pepper to taste. Mix vegetables. Place in oven at 350 degrees and bake for approximately 20 minutes or until onions look translucent and the tomatoes are splitting.

Information:
I usually do not fry foods and thus used a recipe from Bon Appetit. The fritter turned out to be fairly soggy. I think next time I will make the fritters thinner and serve them immediately to prevent them from becoming soggy. Also for the Green Goddess Sauce I used half mayonnaise and half sour cream to reduce the fat and calories. See below for the link.

Skirt Steak with Chimichurri Sauce
Ingredients:
1.25 lb Skirt Steak
Olive Oil
2 tbsp Red wine vinegar
1 lime
1 bunch Mint
1 bunch Basil
1 bunch Flat Leaf Parsley
2 Large Garlic Cloves
Crushed Red Pepper
Salt
Pepper
Mushrooms (optional, I needed to use them so I added them to the dish)
Directions:
Chimicurri Sauce: Place whole washed leaves of mint, basil, and flat leaf parsley in the processor. I usually add one handful of mint, 1/2 bunch parsely, 1/2 bunch basil. However, add the herbs to match your tastes. Have fun with it! Add the juice of one lime, red wine vinegar, and 2 peeled garlic cloves. Add crushed red pepper, salt, and pepper to taste. Turn processor on and add olive oil until there is a fairly runny texture (probably around 1/4 cup to 1/2 cup). Taste and adjust as necessary.
Skirt Steak: Use 1/4 cup of the chimichurri sauce and marinate the steak for 30 minutes. Heat saute pan over medium high heat and add 1 tbsp of oil. Place steak in pan and sear on both sides. Approximately 4-5 minutes per side. Saute mushrooms (if you like) and place over steak. Serve steak with a good amount of chimichurri sauce or to taste.
